Choosing Stainless Steel Cookware

Consider the nickel content. You will find numbers designating the chromium and nickel content. You will see 18/0, 18/8 or 18/10.

The first number, eighteen, designates the chromium content and the second number designates the content of the nickel.

Higher nickel content is better because it provides a shinier finish and higher durability.

To Clad or Not to Clad?

Stainless steel is an ideal material for cookware because it is durable, easy to clean, and does not react with food. By contrast, a reaction can occur in heated copper or aluminum that could cause some copper or aluminum to leach into the food.

Stainless steel is very reasonably priced and will stay looking new for a long time. The only strike stainless steel has against it is the fact that it is a poor conductor of heat, meaning it does not distribute the heat evenly throughout the pan.

Experts from the best stainless steel cookware reviews agree; it is best to steer clear of cookware made of stainless steel only. The best cookware will have an inside layer of another, more heat conductive material, to improve performance.

The inside material is most often aluminum or copper. This type of cookware is called clad, full clad, or multi-clad.

Clad, Full Clad, or Multi-clad?

The term full clad refers to cookware that has an aluminum or copper core in the bottom and up the sides of the pot. This provides the most even heating possible and eliminates hot spots.

For saucepans or stockpots, where you are cooking sauces, soups, or chili, you may want heat to hit the food from the sides as well as the bottom. This type is the best choice, but it is also the most expensive.

For a less expensive option, choose cookware with a core on the bottom of the pan only. It will still perform very well and leave you with more of the green stuff in your pocket.

If you are choosing the core layer on the bottom only, consider whether the layer extends across the entire bottom of the pan. Some less expensive cookware has only a small center disc. This will make the center of the pan hotter than the edges.

Multi-clad refers to the different layers used in the cookware. Some multi-clad cookware contains three layers, some five layers. Check the description of the cookware carefully.

Copper or Aluminum Core?

Aluminum cookware has a warning regarding burns issued by the U.S. Consumer Product Safety Commission. This warning applies to both aluminum and aluminum core cookware.

When an empty or nearly empty pan is placed on high heat, it can cause the aluminum to melt. If you were then to pick it up, the molten aluminum could drip on you, which can cause severe burns or create a fire hazard.

Most people are well aware of the risks of applying heat to an empty pan, and taking precautions against it is simple.

Copper is known to be a better conductor of heat than aluminum, though the best stainless steel cookware reviews state that aluminum is more than sufficient and performs well.

Aluminum is significantly lighter than copper as well. If you are considering purchasing copper core cookware, go to the store and handle it before purchasing.

You should be able to lift a pan and tilt it to pour liquid from it without straining your wrist. Keep in mind the pan will be even heavier with food in it.

By far the best thing aluminum core cookware has in its corner is that it is considerably less expensive than copper core. This makes it the most popular choice because of the value it provides when all things are considered.
