Bare or Enamel?

Bare cast iron needs more maintenance than enameled. Before cooking, always warm the pan first. Then, if needed, spread a thin layer of oil across the cooking surface.

After cooking, wash the cookware with warm water and a nylon brush, and then dry it immediately to prevent rust. It then needs to be seasoned by spreading a small amount of oil throughout the cooking surface again.

If this is not done, you will start to notice an unpleasant odor, and your food will not taste right. If you are iron deficient, try cooking in bare cast iron; it can increase the amount of iron in your food.

Stay away from cooking any acidic foods, such as tomatoes, in bare cast iron. It will break down the non-stick surface you’ve been working so hard to develop.

Bare cast iron is virtually indestructible, and it is the only cookware you can use over a fire.

Cook your favorite spaghetti sauce in enameled cast iron. Enameled cast iron does not need seasoning, and it is easier to clean. It comes in lots of bright and fun colors, so it can double as a serving dish on your table.

If your storage area is visible, they make a pretty display. There are no special cleaning instructions, and some pieces are even dishwasher safe. A quality piece will last just as long as bare cast iron.

However, in lower end pieces, sometimes the enamel chips and the inside coating can scratch. Look for lids that have oven-proof handles and knobs, so you can transfer from stove to oven easily. If this is a problem, there are oven-proof replacement knobs available to purchase separately.

Vintage or New?

Because cast iron has such a long life, buying vintage pieces is a great option. Searching through flea markets, garage sales, antique stores or online auctions is a fun and affordable way to start or add to your cast iron collection.

Cast iron actually improves over time with proper maintenance. Purchasing used items will save you the time of developing that great non-stick surface that progresses over time and use.

You can find high end pieces at lower prices and still get a lifetime of use out of them, and you can find discontinued colors.

Enamel should have few or no chips, and the inside should not be excessively scratched. If you purchase a bare cast iron piece that looks to have been mistreated; you can save it.

Scrub it with a scouring pad and rinse; repeat once or twice. Put it in the oven on the self-cleaning cycle and let it cool. You can then begin seasoning it and using it.

New cast iron, especially bare cast iron, is fairly inexpensive. Some new pieces come pre-seasoned, which saves the first step for you (and really recommended by us), and you can begin using it immediately.

If it is not pre-seasoned, you will need to do the initial seasoning before using it to prevent rust.

Inspect any pieces before buying them; all cast iron cookware is not created equal. Pick it up and handle it. It should be heavy, that’s a sign that it will retain heat well, but not so heavy that it feels cumbersome to handle. The sides should all be of equal thickness.
